Worked with the customer QC, QA, Plant Management and production to insure the best product possible. Monitored payrolls, safety programs, HACCP, bacteria such as listeria testing and results, provided training when needed, chemical testing for proper concentrates etc. All aspects of the cleaning process to and including QC, QA and USDA preoperational inspection. Trouble shooting problems in the contract such as bacteria test failures etc. NOTE: Successfully end listeria positive problems at Dakota Premium Foods in St. Pauls, MN. When I left bug counts were at 100% PERFECT and saved the contacts for MSI.

Oct. 2000 to May 2001Manager 60 PeopleWas contract manager of IBP in waterloo, IAThe second largest slaughter plant in the United States Performed all duties required to run full operation, in charge of the slaughter and the cut floors managers for each and 5 supervisors on each floor, total plant manning was 147 people. Safety, HACCP, full cleaning process, handled all preoperational inspection for QC and USDA. NOTE: Average bug counts were 93% while ran the contract.
Mossberg Sanitation Inc. Jan. 1996 to Oct. 2000Manager 202 PeopleWas contract manager for the largest slaughter plant in the United States performed all duties required to run full operation, in charge of floor as follows:
Kill floor-59 people, 1 manager, 3 supervisor, 8 lead men, and 47 regular employees.Cut floor- 65 people, 1 manager, 4 supervisors, 9 lead men, and 51 regular employees.Conversion-78 people, 1 manager, 5 supervisor, 11 lead men, and 61 regular employees.
NOTE: Included last field report from the regional manager. Case ready floor/ Polly wrap/ pack off/ CDC 1 supervisor, 2 lead men, 13 regular employees. Support and upper management- 1 complex manager (myself), 1 HACCP coordinator, 1saftey coordinator, 1 secretary. Total plant was 212 employees.Also starred up mew contract at different locations such as Sam’s Beef in Corpus Christi, TX, and others.Trouble shot listeria problems at BH Foods in SC. Was successful in getting plant up and running.NOTE: Average bug counts were UN matched at 97% for the entire time I ran the contract. NOTE: Started new contract at Copaz in Cinn. OH, relieved other managers from other plants for vacations with no problems.

Started out working maintenance for 3 months then was promoted to 3rd shift QA supervisor in charge of all plant operations from 10pm- 8am including preoperational inspection for QA and USDA. Training new employees for pre-op, all meat products run on 3rd shift, load outs and exports. Oversee that all maintenance issues were addressed properly and that the plant was fully operational, in charge of Haz- Mat team, mediator for the plant and cleaning contractor, reporting and documenting all downtime and billing contractor for work not performed properly.
